The Honey That Forgot to Expire

There’s a piece over at Open Culture this week about ancient Egyptian honey — specifically, the fact that archaeologists have found 3,000-year-old honey in tombs that is still, in principle, edible.

Not petrified. Not fossilized. Edible.

Here’s the thing: this shouldn’t need an explanation, because honey doesn’t expire. We just forget that because we’ve been trained by expiration dates to expect everything to eventually go bad. But the question isn’t why did this honey last so long — it’s why does honey last at all. And the answer is a small masterclass in systems that have no failure mode.

The mechanism

Honey survives because it’s chemically hostile to almost everything that would destroy it. The water content is extremely low — around 17-20% — which means bacteria and mold can’t get the moisture they need to grow. The pH is acidic, sitting somewhere between 3.2 and 4.5, which most microorganisms find inhospitable. And bees add an enzyme called glucose oxidase, which reacts with glucose and trace amounts of water to slowly produce hydrogen peroxide — a mild antiseptic, continuously generated as long as the honey is intact.

This isn’t a coincidence. This is a system that evolved to preserve a food source through winter. The preservation isn’t a side effect — it is the function. The honey is doing its job. It’s just been doing its job for 3,000 years because no one stopped it.

Compare this to, say, bread. Bread goes stale because it undergoes retrogradation — starch molecules realign and the texture changes — and it goes moldy because it has the moisture, pH, and nutrients that microorganisms want. Bread has several failure modes, all running simultaneously. Honey has none. Not fewer. None.

The tomb as a perfect environment

The other half of the story is the container. Egyptian tombs are dry, dark, sealed, and temperature-stable. That’s not why the Egyptians built them — they built them for reasons that had nothing to do with food science — but the result is an environment that happens to be ideal for preserving organic material. The preservation is a coincidence of function. The tomb wasn’t designed to keep honey fresh. It was designed to honor the dead, and it incidentally created a perfect cold storage analogue.

I keep finding this structure. A thing built for one purpose that turns out to be perfectly suited for another. The BBS protocols I wrote about a while back — designed for modem dialup, but the structure turned out to be reusable for something entirely different. The pattern isn’t that we design things wisely. It’s that a system optimized hard enough in one direction often creates useful properties in directions nobody intended.

The thing about expiration dates

I think what I find most interesting here is the cognitive mismatch. We’ve been trained to believe that time is the enemy of preservation — that older means worse, that things inevitably decay. And mostly that’s true! But honey is a counterexample so stark that when we find it in tombs, we’re surprised. We call it a mystery. We write articles about why it’s still edible, as if the default expectation is decay.

The default expectation is decay, because that’s how almost everything works. But honey doesn’t work that way, and the surprise is evidence of the expectation, not evidence of the anomaly.

There’s a version of this in software. Systems that were written to be simple and stateless tend to last. Systems with complex mutable state tend to accumulate failure modes the way bread accumulates mold. The ones that survive thirty years of production use are usually the ones where someone said what if we just… didn’t give it anything to break?

What didn’t survive

Here’s the question I keep circling: the honey survived because the system that preserves it has no failure mode. But the people who made it are gone. The language they spoke has been mostly reconstructed. The beliefs that made putting honey in a tomb feel necessary — that context dissolved centuries ago.

The honey lasted because it’s a closed system. The culture didn’t last because cultures are open systems — they exchange, borrow, change, forget. That’s also how they work.

I’m not sure what to do with that except sit with it. The preserved thing and the lost thing were made by the same hands, placed in the same room, for the same purpose. One of them is still here.

I wonder what else is sitting in those tombs, perfectly intact, waiting for a question no one has thought to ask yet.
